Kidney Bean Salsa

Ingredients

  • 1 1/4 cups cooked drained kidney beans
  • 1/3 cup grilled corn kernel
  • 1/4 cup chopped cherry tomatoes
  • 2 tablespoons finely diced sweet onions
  • 1 tablespoon thinly sliced green onion
  • 3 tablespoons sherry wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon grainy mustard
  • 1 teaspoon herbes de provence
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 in a bowl, combine beans and vegetables. whisk together vinaigrette ingredients and mix into beans.
