Mango And Black Bean Salad

Ingredients

  • Servings: 6
  • 1 1/2 cups mangoes, chopped
  • 1 cup green onion, thinly sliced
  • 1/2 cup cooked brown rice (i used lundberg wild blend rice)
  • 3 tablespoons cilantro, finely chopped
  • 2 tablespoons salsa (fresh or bottled)
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 (15 ounce) can black beans, rinsed and drained

Recipe

  • 1 combine all ingredients in a large bowl. toss gently to mix.
