Green Italian Minestrone

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 onion
  • 1 potato
  • 1 zucchini
  • 1 (15 ounce) can hominy, drained
  • 1 (15 ounce) can cannellini, drained
  • 6 cups vegetable stock
  • 10 ounces frozen cut green beans
  • 1 cup egg noodles

Recipe

  • 1 cut potato & zucchini into small pieces, and chop onion.
  • 2 preheat olive oil in pan over medium high heat, and saute with salt and pepper (to taste) for 5-6 minutes.
  • 3 add hominy, cannelini, and stock and bring to a boil.
  • 4 stir in noodles and frozen green beans and bring to a simmer.
  • 5 cook 5 minutes longer, or until noodles are cooked.
