Low-fat Black Beans

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 2 (15 ounce) cans black beans, drained and rinsed
  • 1/2 cup onion, chopped
  • 1 cup fat-free chicken broth
  • 1 teaspoon ground thyme
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 combine all ingredients into a medium saucepan.
  • 2 cover and simmer for 10 minutes or until beans are tender and begin to split.
  • 3 serve immediately.

Lightened Green Bean Casserole

Total Time: 40 mins Preparation Time: 40 mins

Ingredients

  • Servings: 8
  • 1/4 cup onion, finely chopped
  • 2 tablespoons flour
  • 1 cup skim milk
  • 1/2 cup lowfat swiss cheese, shredded
  • 1/2 cup low-fat sour cream
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 (8 ounce) packages frozen french style green beans, thawed drained
  • 1 1/2 cups herb seasoned stuffing mix
  • 2 teaspoons margarine, melted
  • 1 egg , lightly beaten

Recipe

  • 1 coat medium saucepan with cooking spray and place over medium heat until hot.
  • 2 add onion, saute 5 min.
  • 3 add flour, and cook 1 min, stirring constantly.
  • 4 gradually add the milk, stirring until blended.
  • 5 stir in the cheese, sour cream, sugar and salt, cook 5 min until thick and bubbly.
  • 6 place green beans in an 8 in square baking dish, pour sauce over.
  • 7 combine stuffing mix, margarine and egg ; and sprinkle over green beans.

Nachos Agrios (sour Cream Nachos)

  • 2 1/2 cups refried beans
  • 5 -6 ounces tortilla chips (homemade or top quality store-bought)
  • 1 cup swiss cheese, grated
  • 1 cup provolone cheese, grated
  • 1 jalapeno, stemmed, seeded and diced
  • 1/2 cup sour cream
  • 1 tablespoon pimiento, drained and chopped (jarred)

Recipe

  • 1 preheat oven to 300 degrees f.
  • 2 heat refried beans in a pan over medium heat until hot (add a little water, but not too much, if you think it's necessary).
  • 3 spread chips out evenly on large oval oven-proof dish. spread beans on top of chips, sprinkle cheeses over beans, and scatter jalapenos over cheese.
  • 4 bake until cheese is completely melted, about 5 minutes. garnish with dollops of sour cream then scatter pimentos over nachos. serve immediately.

Nachos N' Beans

  • 16 ounces bush's baked beans (preferably vegetarian)
  • 1/3 lb cheddar cheese
  • corn chips (amount needed varies)

Recipe

  • 1 take a 1.5qt pyrex bowl and fill the bottom with a layer of corn chips.
  • 2 take about half the cheddar cheese slice it into slices about 2mm thick, and place the slices onto the chips.
  • 3 take the can of beans, and pour the sauce and beans into the bowl.
  • 4 finally make another layer of nachos using more chips and the rest of the cheese on top of the beans. the layer should cover all the beans.
  • 5 place the bowl into the microwave (no cover is needed, since the upper layer of nachos keeps the microwave from becoming dirty), and microwave on high for 5-8 minutes depending on the microwave power. the top layer cooks faster than the bottom layer, so you'll need to experiment to figure out how long it takes the cheese to melt on the bottom.

  • 1 lb extra lean ground beef
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (14 1/2 ounce) can chopped tomatoes
  • 1 (1 1/4 ounce) envelope taco seasoning mix
  • 2/3 cup water
  • 3/4 cup reduced-fat sharp cheddar cheese (3 oz.)
  • 3 (8 inch) flour tortillas, cut in half, then crosswise into 1/2 inch strips

Recipe

  • 1 heat oven to 350 degrees. in 12 inch skillet, cook beef over medium heat 8-10 minutes, stirring occasionally, until brown; drain, stir in beans, tomatoes, seasoning mix and water. cook 2-4 minutes. stirring occasionally, until heated through. stir in 1/2 cup of cheese.
  • 2 in an 8 inch square glass baking dish, spread 2 cups of beef mixture. top with half of the tortilla strips. spoon half of the remaining beef mixture over strips. add remaining tortilla strips; top with remaining beef mixture.
  • 3 bake uncovered about 30 minutes, until bubbly and heated through. sprinkle with remaining cheese and bake 5 minutes longer, until cheese is melted.

Laura's Chicken Pot Pie

Ingredients

  • 3 boneless skinless chicken breasts
  • 10 ounces cream of mushroom soup
  • 2 tablespoons margarine
  • 16 ounces mixed vegetables (i used an equal mix of corn, peas, carrots, and green beans.)
  • 5 tablespoons chicken gravy mix (sauce supreme brand, if you can find it.)
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups water
  • 1 chicken bouillon cube
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 5 tablespoons chilled margarine
  • 2 large eggs
  • 3 tablespoons ice water

Recipe

  • 1 place chicken in crockpot.
  • 2 cover with condensed mushroom soup. (do not add liquid.).
  • 3 stir to coat chicken. cook for 3 to 4 hours or until done.
  • 4 cut or shred chicken to desired size.
  • 5 keep in fridge until ready to add to pie filling.
  • 6 for crust, combine flour and salt.
  • 7 cut margarine into flour mixture to form coarse crumbs. (i use a sturdy fork to do this.).
  • 8 beat together egg and ice water.
  • 9 add to flour, and mix until a soft dough forms.
  • 10 flatten dough on plastic wrap to fit your pan.
  • 11 chill for an hour.
  • 12 preheat oven to 375°f.
  • 13 heat vegetables and margarine over medium heat.
  • 14 stir in gravy mix and flour.
  • 15 add water and cook until slightly thickened.
  • 16 stir in chicken mixture.
  • 17 pour filling into 9 inch square pan.
  • 18 cover with crust.
  • 19 make a few slits in crust.
  • 20 bake for about 30 minutes or until crust is golden brown.

Chili With Beef 'n Beans

Nachos Supreme

Ingredients

  • Servings: 6
  • 1 teaspoon olive oil
  • 1 garlic, cove minced
  • 1/2 lb ground turkey
  • 2 tablespoons taco seasoning mix
  • 15 ounces black beans, rinsed and drained
  • 4 ounces jarred taco sauce
  • 6 (6 inch) corn tortillas, cut into quarters
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup corn
  • 1 cup salsa

Recipe

  • 1 heat the oil in a large skillet over medium-high heat. add the onion and garlic and cook, stirring occasionally, until softened, about 4 minutes. add the turkey and seasoning mix. cook, stirring occasionally, about 6 minutes. add the taco sauce and beans until blended, about 5 minutes. remove from heat and set aside.
  • 2 preheat the broiler. arrange tortilla pieces in one layer on the broiler rack; spray the tortillas lightly with nonstick cooking spray.
  • 3 broil 4 inches away from the heat, turning frequently, until crisp and golden, about 4 minutes.
  • 4 put the chips on a 9x13-inch cookie or jelly roll sheet. spoon the turkey mixture over the chips. top with cheese, salsa and corn. broil 4 inches from the heat until the cheese is melted, about 2 minutes.
  • 5 top with extra tomatoes, scallions or cilantro if desired. you could also add sour cream or yogurt, but i can't say how many points that would be :).

Fasolakia (green Bean Side Dish)

  • 2 lbs fresh green beans
  • 1 large chopped onion
  • 4 potatoes
  • 4 ripe tomatoes
  • 3 sliced onions
  • chopped garlic
  • chopped parsley
  • 1 pinch sugar

Recipe

  • 1 clean and wash the beans.
  • 2 warm the oil in a pot and simmer the onions and throw in the rest of the ingredients, except for the potatoes, with a little bit of water and leave the beans to slowly cook for 20 minutes.
  • 3 cut the potatoes in 4 wedges and put them in the pot last.
  • 4 if needed put in more water and let the food boil for a while.
  • 5 serve hot.

Low-fat Black Bean Chili

  • 1 lb dried black beans
  • 2 tablespoons chili powder
  • 2 onions, chopped
  • 2 carrots, chopped
  • 2 garlic cloves, minced
  • 2 stalks celery, chopped
  • 1 (28 ounce) can plum tomatoes, undrained
  • 1 orange, quartered (unpeeled)
  • 1/2 cup italian parsley, chopped
  • 4 chicken bouillon cubes
  • 2 teaspoons tabasco sauce
  • 2 teaspoons cumin (or to taste)

Recipe

  • 1 soak the beans overnight, drain and rinse.
  • 2 cover the beans with water in a large pot, bring to a boil and simmer 1 hour.
  • 3 add the remaining ingredients except the parsley and simmer for 1 1/2 hours or until the beans are tender, adding more water if needed.
  • 4 remove the orange quarters and serve over cooked whole grains; sprinkle with parsley.

Duo-colored Pasta Salad

  • 4 ounces fettuccine
  • 4 ounces spinach fettuccine
  • 16 ounces frozen cut green beans, thawed
  • 1/4 cup green onion, chopped
  • 1 pint cherry tomatoes, halved
  • 8 ounces creamy herb salad dressing
  • 6 ounces monterey jack cheese, julienned

Recipe

  • 1 break fettuccine into 3" pieces; cook to desired doneness as directed on package. drain. rinse with cold water; drain again.
  • 2 in large bowl, combine fettuccine, green beans, onions, tomatoes, and dressing; toss gently. cover.
  • 3 refrigerate several hours to blend flavors.
  • 4 just before serving, add cheese to fettuccine mixture and toss gently.

  • 1 teaspoon vegetable oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • kosher salt

  • 2 (15 ounce) cans vegetarian baked beans
  • 2 teaspoons worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 2 cups biscuit mix (such as bisquick)
  • 1 cup skim milk
  • 1/2 cup egg substitute (such as egg beaters)
  • 1 tablespoon honey
  • 1 1/2 cups shredded low-fat cheddar cheese

Recipe

  • 1 preheat the oven to 350°f (175°c).
  • 2 crumble the ground turkey into a large skillet over medium heat and season with salt and pepper. when fully browned (5-8 min), transfer to a 13x9 casserole with a slotted spoon.
  • 3 add vegetable oil to pan, then stir in the onion and garlic, and season with salt and pepper. continue to saute until the onion is tender and translucent, 3-5 minute.
  • 4 stir in the baked beans, worcestershire sauce, brown sugar, chili powder and oregano. add to turkey in casserole dish and stir well. sprinkle 3/4 c shredded cheddar cheese over the meat and beans.
  • 5 in a separate bowl, mix together the baking mix, milk, egg substitute and honey. pour this mixture evenly over the dish.
  • 6 bake for 40 to 45 minutes in the preheated oven, until the biscuit topping is golden brown. sprinkle with remaining cheddar cheese and return to oven for 5 minutes or until cheese is bubbly.

Cherry Vanilla Cream Soda

  • 2 cups sugar
  • 1 vanilla bean, split
  • 2 tablespoons vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 cup cherry juice
  • 1 quart soda water
  • 1 cup water

Recipe

  • 1 in a small saucepna, combine 1 cup water and the sugar add the vanilla bean. boil over medium heat for two minutesor until mixture has reduced to a thin syrup.
  • 2 remove the vanilla bean, rinse and reserve for another use.
  • 3 allow the syrup to cool. stir in extracts and cherry juice.
  • 4 pour two tablespoons of cherry vanilla syrup over ice and fill glass with soda water. stir to combine.

  • 2 cups sliced turnips
  • 2 cups sliced potatoes

  • 1 brown the ground beef in a very large pot. drain well.

  • 4 (15 ounce) cans dark red kidney beans
  • 2 carrots, finely chopped
  • 1 (16 ounce) bottle dark beer
  • 2 hot peppers, sliced
  • 1 cup red wine
  • lemon juice
  • 1 pinch fresh dill
  • 1 teaspoon coriander
  • 1 (14 ounce) can beef broth
  • 1 teaspoon cayenne
  • 3 1/2 tablespoons chili powder
  • 2 onions, chopped
  • 2 tablespoons olive oil
  • 2 (6 ounce) cans tomato paste
  • 2 tablespoons cumin
  • 3 garlic cloves
  • 1 (15 ounce) can diced tomatoes

Recipe

  • 1 heat oil in a large saucepan over medium heat. cook onions, garlic, lean meat in oil for 10 minutes, or until the meat is well browned and the onions are tender.
  • 2 mix in the diced tomatoes with juice, dark beer, wine, tomato paste and beef broth.
  • 3 season with chili powder, cumin, dill, cayenne pepper, coriander and salt.
  • 4 stir in carrots, 2 cans of the beans and hot chile peppers.
  • 5 reduce heat to low, and simmer for 2 hours.
  • 6 stir in the 2 remaining cans of beans, and simmer for another 30 minutes.
  • 7 top with sour cream and cheese if desired!

Low-fat Bisquick Oven Fried Chicken

Ingredients

  • 2 -3 lbs meaty chicken pieces (we like thighs)
  • 2/3 cup bisquick reduced-fat baking mix
  • 1 1/2 teaspoons paprika
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter

Recipe

  • 1 place butter in 13x9 pan. preheat oven to 425°f and place pan and butter in oven while it's preheating.
  • 2 combine bisquick, paprika, salt, and pepper in a large resealable bag.
  • 3 skin chicken, if desired. rinse each piece under cold water. then place in bag, one or two pieces at a time, and shake to coat well.
  • 4 when butter is melted in pan (pan should be hot), place meat in pan, meaty sides down.
  • 5 bake 35 minutes; turn pieces over and bake an additional 10-15 minutes or until internal temperature reaches 160°f.
  • 6 excellent with mashed potatoes, biscuits, and green beans!

Chana Masala (spicy Chickpeas) With Spinach

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 (14 ounce) can chickpeas (in water or precooked,also called garbanzo beans)
  • 1/2 cup water
  • 1/2 onion, diced
  • 3 garlic cloves, diced
  • 3 tablespoons olive oil
  • 1 lemon, juice of (approx 2 tbsp)
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garam masala
  • 1 bunch fresh spinach, rinsed

Recipe

  • 1 in a large skillet or frying pan, sautee onions and garlic in olive oil until soft, about 3-5 minutes.
  • 2 add chickpeas straight from the can, including all the water.
  • 3 add spices and lemon juice, cover, and simmer about 10-15 minutes, stirring occasionally, adding more water if needed, until chickpeas are browned and soft.
  • 4 reduce heat, add spinach and cover.
  • 5 allow spinach to wilt for 2-4 minutes.
  • 6 serve immediately.

Greek Chicken Salad With Lemon-herb Dressing

  • Servings: 4
  • 3 cups shredded romaine lettuce
  • 2 cups chopped cooked chicken
  • 1 cup garbanzo beans, drained
  • 2 tomatoes, cut into wedges
  • 3/4 cup kalamata olive, pitted
  • 1 (4 ounce) package crumbled feta cheese
  • 3 tablespoons lemon juice
  • 1/2 cup olive oil
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

  • 1 salad: combine first 5 ingredients in a large bowl.

Marinated Corn Salad

  • 16 ounces frozen whole kernel corn
  • 3 -4 green onions
  • 15 ounces black beans (drained and rinsed)
  • 8 ounces diced tomatoes
  • 1/2 cup mojo marinade
  • 1 tablespoon honey

Recipe

  • 1 thaw corn in colander under cool running water 2-3 minutes; drain thoroughly and place in a medium bowl.
  • 2 slice green onions thinly; add to corn. stir in remaining ingredients; let stand 10 minutes for flavors to blend. stir and serve.

  • 2 fry garlic and onion until soft.
  • 3 put beans in a bowl, mash them a bit with a fork.

  • 8 *****pre-heat oven to 190 degrees*****.

Light Tart Crust

  • 5 tablespoons unsalted butter
  • 2 tablespoons splenda sugar substitute
  • 1 pinch kosher salt (1/8 tsp.)

  • 2 using a fork, cut in the butter until it resembles coarse meal and then add beaten egg until all combines together.

  • 1 this is a wonderful cake that keeps in the refrigerator for days looking just like the day you first made it!
  • 2 to make it, firstly mix the gelatine with the cold water.
  • 3 heat the milk and add sugar.

  • 5 once cooled, add the gelatine.
  • 6 finally add the whipped cream folding in carefully.
  • 7 either make a thin sponge base or use a bought one.

  • 1 in a saucepan, combine the soaked chana dal, 1 tablespoon ginger garlic paste, turmeric powder and red chili powder. add water; the water should cover the lentils entirely. bring to a boil then lower to a gentle simmer for about 35-40 minutes. add salt half-way through the cooking process (it will bring out the natural flavor of the lentils and the lentils will be more tender) and keep stirring every now and then so the lentils don't stick to the bottom of the pot. the liquid should have evaporated. remove any liquid (if any).
  • 2 take the bitter gourds and peel off the skin. cut each bitter gourd longways and de-seed them. sprinkle salt all over the bitter gourds to cover them well with salt. set aside for at least 3 hours.

  • 85 g baby spinach, washed and trimmed from stems
  • 1 large shallot, chopped
  • 1 garlic clove, crushed
  • 9 tablespoons olive oil
  • 2 red peppers, 5mm dice
  • 1 bay leaf
  • 1 sprig thyme
  • 1/4 teaspoon caster sugar

  • 1 dressing:.
  • 2 fry the shallot and garlic in 4tbsp of the olive oil - do not let them colour. add the peppers, bay leaf and thyme and simmer for 5 minutes. remove from the heat, stir in the sugar and the rest of the oil decant into a jug and leave to infuse until needed.
  • 3 salad:.
  • 4 shred the spring onions and place in a bowl if iced water to curl them.
  • 5 slice the runner beans into long strips and cook the beans in salted water until just softened drain and cool.
  • 6 fry the bread in 4 tbsp of the oil until golden and crispy add a knob of butter and toss. drain on kitchen paper and season well. (this can be done up to 2 hours in advance).
  • 7 using a y peeler peel the courgette lengthways to make strips.
  • 8 heat the remaining olive oil and butter and stir fry the green peppers until just soft. add the green beans and swirl empty into a bowl. and season.
  • 9 scatter the courgettes, onion, basil, baby spinach and bread over the veg. spoon over enough dressing to moisten and serve the rest separately. dress with shaved parmesan if desired.

N'awlins Inspired Black Beans And Cajun Sausage

  • 14 ounces dried black beans, medium sized bag, soak and drained twice
  • 1 large onion, chopped
  • 2 celery ribs, chopped
  • 1 teaspoon fresh cilantro
  • 1 1/2 teaspoons dried chipotle powder
  • 1 teaspoon onion powder
  • 1 tablespoon instant minced garlic or 3 fresh garlic cloves
  • 1 1/2 teaspoons cumin
  • 2 bay leaves
  • kosher salt
  • 1 lime, juice of
  • 1/2 teaspoon lime rind
  • 12 ounces chicken stock, canned ok
  • 2 -3 smoked ham hocks
  • 1 lb cajun sausage

Recipe

  • 1 cook sausage with 1/2 cup water in large heavy bottomed pot that the beans will be cooked in, allow water to dissipate and sausage to brown until you have a good fond going on in the pan. once you have a good caramelized pan, remove the sausage allow to cool and fridge them.
  • 2 drain grease and replace with tablespoon of a light flavored oil and saute/brown your onion - salt, add celery - salt, all spices and saute till translucent - avoid burning your fond! add stock to deglaze pan.
  • 3 add ham hocks (note: these tend to shed bone shards, avoid stirring once these are in the mix. remove them after cooking is complete and pull the meat off the bone on a separate plate. add the meat back into the mix).
  • 4 add beans.
  • 5 add enough water to just cover beans/ham hocks bring the party to a boil then reduce heat and cook until beans are soft. i used a pressure cooker, the whole meal was done in 30 minutes -- with that said, only allow pressure to get it's initial burst of steam then bring down the heat to a low simmer -- beans can foam up and clog your cooker - always monitor this process.).
  • 6 while awaiting the beans to soften, prep lime and the lime rind, cut sausage into bite size chunks - taste sausage for heat and adjust to your preference. consider some cayenne to the mix. the chipotle pepper does provide a subtle heat that will make your forhead sweat but no significant affect to the tongue.
  • 7 once the beans are cooked, add remaining ingredients and simmer another 10 minutes. i like my beans a bit soupy so i choose not to thicken it. to help thicken the dish, food process 1/3 of the beans into a paste then reincorperate them.
  • 8 serve over rice, perhaps corn bread or fried plantains.
  • 9 garnish
  • 10 chopped red bell pepper & scallions.

Greek Butter-bean Salad

  • 4 ripe plum tomatoes

  • 1 small red onion, thinly sliced

  • 1 roughly chop one of the tomatoes and place in a liquidizer with half the mint and garlic and whizz until smooth.
  • 2 add the lemon juice and the live oil and some salt and pepper and whizz again to make a smooth dressing.
  • 3 cut the remaining tomatoes into wedges and toss with the butter beans, olives, red onions, feta and dressing.
  • 4 transfer to serving plates, scatter over the reserved mint and serve with warm pitta bread.

  • fat (i used 4 strips of chopped bacon)
  • vegetables (such as shallots, green onions, garlic, onions)
  • canned beans, in sauce (red and pinto)

  • manzanilla olives, chopped (i used 1 tsp)
  • capers (i used 1 tsp)
  • tomato, chopped
  • citrus zest (lemon or lime)
  • wine vinegar
  • beef broth (i used chicken) or beef base (i used chicken)
  • seasoning (sazon, cumin, coriander)
  • brown sugar
  • chives, chopped (garnish)

Recipe

  • 1 slice shallots and green onions. mince garlic and onions. saute in hot pan the fat until vegetables are tender.
  • 2 once the vegetables have cooked tender add the beans, sauce, olives, capers, tomatoes, zest (i used lemon), wine vinegar, and beef broth.
  • 3 add seasonings and brown sugar.
  • 4 cook this down until it's thick like a sauce, but not to thick. garnish with chives if using.
  • 5 serve over cooked saffron rice (i seasoned with salt, cumin, coriander, paprika, onion powder, garlic powder and butter flavored with lemon zest).

Marinated Chickpea Salad

  • 1 (15 ounce) can garbanzo beans (chickpea)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup green onion, chopped
  • 2 tablespoons rice wine vinegar

  • 1 tablespoon olive oil
  • 1 packet splenda sugar substitute
  • 1/2 teaspoon salt

  • 4 cover and marinate overnight.
  • 5 the chickpeas will absorb the flavor nicely.

  • 1 in a saucepan, cook hamburger (or sausage) until fully cooked.
  • 2 drain grease, and then add cut up hot dogs, onion, and bell pepper. cook for an additional 5 minutes on medium heat.
  • 3 in a casserole dish (4 x 6 works well), put baked beans and ketchup together and mix well.
