Kielbasa With Pineapple And Beans

Ingredients

  • Servings: 4
  • 1 (18 ounce) can pineapple chunks (undrained)
  • 2 (15 ounce) cans cannellini beans (undrained)
  • 1 lb kielbasa, sliced
  • 3 tablespoons brown sugar
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons flour

Recipe

  • 1 combine all ingredients except the flour and cook, covered, on medium-low until it begins simmering, stirring occasionally.
  • 2 mix flour with a little cold water and stir into pot.
  • 3 simmer, covered, for about 20 minutes or until sufficiently thickened, stirring occasionally.
  • 4 serve over rice or with bread to soak up the sauce.

Mango And Black Bean Stew

Ingredients

  • Servings: 4
  • 1/2 tablespoon canola oil
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1 medium sweet potato, peeled and diced
  • 1 small red bell pepper, diced
  • 3/4 lb tomato, diced
  • 3/4 cup water
  • 1 (16 ounce) can black beans, well-rinsed and drained
  • 1 mango, peeled, seeded and diced

Recipe

  • 1 heat the oil in a large pot over medium heat, and cook the onion and garlic until tender.
  • 2 add in the sweet potato, bell pepper, tomatoes, and water. bring to a boil, reduce heat to low, cover and simmer until sweet potatoes are tender, about 15 minutes.
  • 3 add beans and cook uncovered until heated through, then add the mango and cilantro and season with salt to taste.

Boston Baked Beans

Ingredients

  • 1 lb dried navy beans
  • 2 onions, chopped
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1/3 cup catsup
  • 1/4 lb bacon, diced
  • 1 tablespoon salt
  • 1 1/2 teaspoons dry mustard
  • 1/4 teaspoon pepper

Recipe

  • 1 soak beans in water overnight. drain and put all ingredients in cooker.
  • 2 add 1 cup water and stir to blend.
  • 3 cover and cook on low 10 to 12 hours.
  • 4 can also spice it up with a few cloves of garlic, a half teaspoon of powdered ginger, and a good dash of worcestershire sauce. as an option, stir in 1 cup drained pineapple chunks during the last hour of cooking for a delicious fruity flavor.

Chole Masala

  • 1 cup chickpeas
  • 1 green chili, slit
  • 2 teaspoons salt
  • 2 1/2 cups water
  • 1 medium onion
  • 5 cloves garlic
  • 3 cm ginger
  • 3 tablespoons water
  • 3 tablespoons oil
  • 1 teaspoon cumin seed
  • 2 teaspoons coriander powder
  • 1 teaspoon chili powder
  • 2 teaspoons cumin powder
  • 3 large tomatoes, finely chopped
  • 1 teaspoon garam masala

Recipe

  • 1 soak gram overnight and pressure cook with rest of ingredients till done.
  • 2 grind the paste with water.
  • 3 heat oil in a wok add cumin seeds.
  • 4 when they splutter add the ground paste and stir constantly till brown.
  • 5 add coriander,chilli and cumin powder.
  • 6 add tomatoes and fry until oil seperates.
  • 7 add cooked gram and garam masala.
  • 8 simmer for 5-10 minute.
  • 9 garnish with lemon slices.

Kielbasa Stew (crock Pot)

Ingredients

  • 6 slices bacon
  • 1 onion, chopped
  • 1 lb kielbasa, smoked fully cooked, thinly sliced (up to 1 1/2 pounds)
  • 2 (15 1/2 ounce) cans great northern beans
  • 2 (8 ounce) cans tomato sauce
  • 1 (4 ounce) can green chilies, chopped
  • 2 medium carrots, thinly sliced
  • 1 medium green pepper, chopped

  • 1 fry bacon in skillet until crisp.
  • 2 crumble bacon and place in large slow cooker.

  • 1 -2 tablespoon oil or 1 -2 tablespoon butter
  • 1 lb smoked kielbasa, sliced 1/2 inch thick
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried rosemary, crushed
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 (14 1/2 ounce) can peeled diced tomatoes

Recipe

  • 1 heat oil or butter in a large skillet, add kielbasa and cook over medium high heat until lightly browned, remove with slotted spoon.
  • 2 reduce heat to medium, add onions and cook until transparent.

  • 4 add kielbasa, tomatoes and beans, bring to a boil, reduce heat and simmer 10 minutes.

  • 1/2 cup soft silken tofu
  • 1/2 cup soymilk (sweetened or plain)
  • 2 tablespoons tahini
  • 2 tablespoons sunflower oil
  • 1 tablespoon extra virgin olive oil

  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried basil

  • 1 throw all the ingredients in a food processor or blender. mix until smooth.
  • 2 it helps to leave it a short while after mixing to let the ingredients drip to the bottom and then mix again.
  • 3 omac: i triple the recipe to use a whole 12 oz box of tofu. i then split the batch into cup portions (about) and freeze. i find each portion does two salads. i let it thaw in the fridge a couple of days before use, but based on other experience i expect it would defrost in the microwave fine.

  • 1 (23 3/4 ounce) jar market pantryâ® garden combo pasta sauce

  • 1 preheat the oven to 425ºf.
  • 2 in a large bowl, mix the beef, green beans, eggs, bread crumbs, parmesan, salt, and pepper with your hands until well mixed. form into 9 baseball-sized meatballs and place in a single layer in a 13-by-9-by-2-inch baking dish.

Kielbasa, Beans And Barley

Ingredients

  • Servings: 4
  • 1/4 cup pearl barley
  • 1/2 teaspoon kosher salt
  • 3 cups water
  • 1/2 large sweet onion
  • 1/2-1 lb turkey kielbasa
  • 1 (15 ounce) can beans
  • 1/2 cup warm water
  • 1/4 teaspoon no-sodium chicken bouillon
  • 1 dash parsley

Recipe

  • 1 cook barley per package directions. this will take between 1 hr to 1 1/2 hours.
  • 2 chop onion and kielbasa. spray pan with pam and saute onion over medium heat until softened.
  • 3 add kielbasa and saute for a few minutes longer.
  • 4 drain and rinse beans, then add to pan.
  • 5 dissolve bouillon in water, then add to pan along with parsley.
  • 6 add barley, stir well and cook until all is heated through and excess liquid evaporates. (it should be moist, just not soupy.).

Louisiana Red Beans And Rice

  • 1 lb dried beans
  • 1 large onion
  • 1 bell pepper
  • 1 lb sausage
  • water
  • 3 cups rice
  • 6 cups water

Recipe

  • 1 soak beans overnight, if desired, and drain.
  • 2 in an iron pot, cover beans with 2 inches of water. add chopped onion, pepper, and sausage. bring to a heavy simmer, and cook for 1-2 hours until tender, periodically checking on them and adding water as needed (they are easy to burn.).
  • 3 when the beans are about ready, cook rice as you normally would. season to taste, and serve warm over rice.
  • 4 note: if you don't soak the beans, you can simply cook them for an additional hour or two. it is really hard to give a time for cooking this, as it depends on how old the beans are, what kind of beans they are, how long they soaked, and how much of a simmer you have them cooking at. i have prepared un-soaked navy beans in an hour and a half; but i have also had un-soaked kidney beans that took a full 4 hours. you can always start them about 4 hours before you want to eat, and then if they get done sooner just turn the heat off and warm them up again in time to eat.

Herb Chicken With Cuban Mojo

  • 1 tablespoon lime zest
  • 1/4 cup lime juice

  • 2 tablespoons chopped fresh basil leaves
  • 1 teaspoon red pepper flakes (to taste)
  • salt
  • 1/4 cup olive oil
  • 2 tablespoons chopped fresh parsley

  • 2 tablespoons chopped garlic
  • salt
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1 teaspoon hot pepper sauce
  • 1/4 cup olive oil

  • 1 trim fat and extra skin from thighs. combine lime zest and juice, garlic, herbs, red pepper flakes, salt and 3 tbsp oil in a bowl.
  • 2 toss with chicken and marinate for 1 hour on the counter or up to 4 hours, refrigerated.
  • 3 preheat oven to 400°f
  • 4 heat remaining oil in non-stick skillet. drain chicken, add the pieces skin-side-down, do not crowd the pan.
  • 5 fry 3 minutes. turn over and fry 1 minute more.
  • 6 continue browning remaining chicken.
  • 7 place on rack in oven over a baking sheet and bake 20 minutes or until juices are clear.
  • 8 to make the mojo:.
  • 9 combine all ingredients except olive oil in bowl.
  • 10 heat olive oil in a pot until very hot. pour olive oil over mixture.
  • 11 cool and reserve until needed.
  • 12 serve chicken drizzled with mojo sauce.

Ham And Potato Skillet

  • 1/2 lb ground cooked ham
  • 2 cups chopped potatoes
  • 1/2 cup chopped onion

Recipe

  • 1 spray a large skillet with pam.
  • 2 in the skillet cook ham, celery, and onion till vegetables are tender.
  • 3 stir in potatoes, fresh green beans if using them, water, thyme and pepper.
  • 4 bring to boiling; reduce heat.
  • 5 cover and simmer for 20 minutes or till potatoes are tender and most of the liquid is absorbed.
  • 6 if using frozen green beans, add to ham and potato mixture the last 7 minutes of cooking.
  • 7 to serve, sprinkle with parmesan cheese.

  • 1/2 cup tahini
  • 1 large garlic clove, minced
  • 3 -4 tablespoons lemon juice (bottled or fresh)
  • 1/4-1/3 cup reserved juices (from drained chickpea can)

Recipe

  • 1 combine the chickpeas, tahini, garlic, and lemon juice in a food processor.
  • 2 process until smooth.
  • 3 slowly pour in 1/4 cup juice from chickpean can and process again.
  • 4 check consistency: it should be spreadable, not runny.
  • 5 add more chickpea can juice if it is too thick.
  • 6 scrape it into a bowl.
  • 7 refrigerate overnight.

Crock Pot Chili Dogs

  • 1 (10 3/4 ounce) can condensed cheddar cheese soup, undiluted

  • 1 place hot dogs in crock pot.
  • 2 in a bowl, combine the chili and soup and pour over hot dogs.

Boston Baked Beans

Ingredients

  • 1 quart dried pea beans, picked over
  • 3/4 lb bacon or 3/4 lb salt lamb
  • 1 tablespoon salt
  • 3 tablespoons sugar (optional)
  • 1/2 teaspoon dry mustard (coleman's preferred)
  • 1/3 cup molasses
  • 1 cup water, boiling

Recipe

  • 1 soak beans overnight in water.
  • 2 in the morning, drain and cover with 2 quarts of fresh water.
  • 3 heat to simmering point and cook slowly for 1 1/2 hour or until skins burst readily when a bean is removed from the pan and blown upon.
  • 4 drain.
  • 5 cut off one slice of lamb and score through the rind in squares.
  • 6 place the slice of lamb in the bottom of the bean pot, add the par-boiled beans and bury the other piece of lamb in the top portion of the beans, having only the scored rind exposed.
  • 7 mix the salt, sugar, mustard, molasses and boiling water; pour over the beans, adding enough additional boiling water to cover.
  • 8 cover the pot and bake at 250f for 6 to 8 hours, adding additional boiling water as needed.
  • 9 uncover during the last half hour of baking to brown the top.
  • 10 variations: maine and cape cod baked beans; place a peeled onion in the bottom of the bean pot. new hampshire and vermont baked beans; use maple syrup or maple sugar in place of the molasses. connecticut and new york baked beans; add onion and tomato ketchup or chili sauce.

  • 1 brown the beef; drain off fat.
  • 2 in the same pan, saute onions and peppers in the olive oil.
  • 3 combine beef, sauted onions/peppers and remaining ingredients in large pot.

Dal Bukhaari

  • Servings: 6
  • 1 cup urad dal, whole soaked over night
  • 2 tablespoons ginger paste
  • 2 tablespoons garlic paste
  • 200 ml tomato paste
  • 2 teaspoons kashmiri chili powder
  • 1/4 cup butter
  • 1/2 cup fresh cream
  • 1/2 teaspoon garam masala powder (optional)
  • salt

Recipe

  • 1 pressure cook the dal with salt for about 15-20 minutes.
  • 2 mash the dal well with the back of the laddle.
  • 3 add the ginger garlic pastes, tomato puree, red chilli powder and 1/2 the butter and cook for about 20 minutes.
  • 4 add cream and cook for another 10 minutes.
  • 5 the texture of this dal is creamy.
  • 6 finish off with the garam masala if you like.
  • 7 serve piping hot with any of the many indian breads.

  • 9 the original recipe does not contain garam masala in it. sometimes i add the same for a variation and it tastes great!

Asparagus With Chorizo And Croutons

Ingredients

  • Servings: 4
  • 1 lb thick firm asparagus
  • 1/4 cup olive oil
  • 4 ounces spanish chorizo, cut into 3/4-inch pieces
  • 2 cups bread cubes (croutons, 3/4-inch)
  • 1/4 cup whole almond
  • 1 cup cooked beans (your preference, canned ok)
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper

Recipe

  • 1 make this right as you are ready to eat. cut each asparagus stalk into 3 or 4 pieces. heat the oil in a large skillet until very hot. add all the ingredients except the beans, if using, and salt and pepper. cover and sauté over high heat for 5 to 6 minutes (thinner asparagus might be done sooner), tossing or stirring the mixture a few times, so it browns and cooks on all sides. add the beans, if using, and salt and pepper, toss again, and serve.

  • 30 large marshmallows
  • 1/4 teaspoon food coloring (we use pink)
  • 4 1/2 cups corn flakes
  • jelly beans (small variety)

Recipe

  • 1 melt butter over medium heat in a large pan.
  • 2 add marshmallows and stir until melted.
  • 3 turn off heat and add food coloring. mix until well blended.
  • 4 add corn flakes and stir until coated.
  • 5 drop by large spoonsful on wax paper.
  • 6 top each with three jellybeans (work quickly!).
  • 7 let sit until hardened and then store in a covered container.

Dal With Protein Chunks

Ingredients

  • Servings: 2
  • 1 cup pigeon peas, split (arhar dal)
  • 1/2 cup soyabean nuggets
  • 1 medium onion
  • 3 cloves garlic
  • 1 inch ginger
  • 2 -3 green chilies
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 6 -7 curry leaves (optional)
  • salt
  • 2 tablespoons oil
  • 4 red chilies, whole
  • 1/2 teaspoon mustard seeds
  • lemon juice (as required)

Recipe

  • 1 wash and soak dal for 3-4 hours.
  • 2 soak soyabean nuggets in plenty of water for 2-3 hours.
  • 3 drain off water and squeeze out water.
  • 4 re-soak in fresh water for half an hour.
  • 5 drain and then squeeze out excess water.
  • 6 now the nuggets are ready for cooking.
  • 7 in the meantime, make a smooth paste of onion, tomato, garlic, green chillies and ginger.
  • 8 keep aside.
  • 9 drain the dal water and pour in 2 cups water.
  • 10 pressure cook till done.
  • 11 whisk while still hot to make a smooth puree.
  • 12 heat 1 tbsp of oil and add the prepared paste.
  • 13 fry on gentle heat till an aroma starts coming.
  • 14 add prepared soyabean nuggets and red chilli powder.
  • 15 mix well.
  • 16 add a cup of water and cook covered for 5 minutes.
  • 17 add puree of dal and cook on medium heat, stirring continuously, or 5 minutes.
  • 18 heat the remaining oil and add mustard seeds and dry chillies broken into two.
  • 19 fry till the chillies turn dark brown.
  • 20 pour on the hot dal.
  • 21 stir well.
  • 22 simmer for a few minutes and remove from heat.
  • 23 keep aside for atleast half an hour and then serve with lemon juice.

  • 1 warm the oil in a large casserole dish with a tight-fitting lid on a medium heat and gently brown the chicken pieces on all sides, skin side first. when they are a rich golden colour, remove and put to one side.
  • 2 add the onion, carrots and celery and fry in the oil until just beginning to soften. add the garlic and stir for a further minute, then return the chicken pieces to the casserole.

Mussels In Black Bean Sauce

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1 1/2 kg mussels
  • 1 tablespoon peanut oil
  • 2 teaspoons fresh ginger, grated
  • 4 garlic cloves, crushed
  • 6 green onions
  • 2 red chilies, chopped finely (add as many or few seeds as you like.)
  • 50 ml black bean sauce
  • 2 tablespoons fish sauce
  • 100 ml water
  • 2 teaspoons sugar
  • 1/2 cup fresh coriander leaves, roughly chopped

Recipe

  • 1 scrub mussels under cold water, remove beards.
  • 2 add to boiling pot of water cover and cook 5 minutes or until mussels open
  • 3 drain, discard any that don't open
  • 4 cover and set to one side.
  • 5 heat oil in a wok
  • 6 add ginger, garlic, onions and chilies, stir fry until fragrant
  • 7 add sauces, water and sugar. stir to combine
  • 8 add mussels, cover. stir occasionaly to heat through.
  • 9 stir in coriander, serve immediately.
  • 10 i served mine with a nice side salad.

Jota: Sauerkraut, Bean And Lamb Soup

Ingredients

  • Servings: 4
  • 10 ounces dried kidney beans
  • 3 tablespoons extra-virgin olive oil
  • 1 1/2 lbs lamb shoulder, fat trimmed, cut into 1-inch cubes
  • salt and pepper
  • 1/4 lb slice speck, finely diced
  • 3 large sage leaves, finely chopped
  • 2 tablespoons fresh italian parsley, finely chopped
  • 4 garlic cloves, peeled and minced
  • 1 quart mario's brown chicken stock or 1 quart other good chicken stock
  • 8 ounces sauerkraut, rinsed and drained
  • 1/3 cup polenta flour

Recipe

  • 1 bring the kidney beans to a boil in a large pot with plenty of salted water. remove from the heat, cover and set aside for 1 hour.
  • 2 in a large casserole or dutch oven, heat the olive oil over high heat. season the lamb well with salt and pepper and sear on all sides, working in batches if necessary, and remove the meat when it is browned. add the speck, sage, parsley, and garlic and saute for 5 minutes before returning it to the casserole.
  • 3 drain the beans and add them to the casserole with the stock and the sauerkraut and bring to a simmer. cook the mixture slowly for 45 minutes, or until the lamb is very tender and the beans are cooked through.
  • 4 slowly sprinkle the polenta over the stew and stir constantly for 10 minutes, or until the polenta has expanded. season with salt and pepper, to taste, and serve.

Mango Black Bean Salsa

  • 1 cup cooked black beans or 1 cup well-rinsed canned black beans
  • 3 ripe mangoes, peeled, pitted, and diced small
  • 1/2 red bell pepper, seeded and diced small

  • 3/4 cup pineapple juice
  • 1/2 cup fresh lime juice (about 4 limes)

  • 1 red capsicum, finely chopped
  • 3 celery ribs, chopped
  • 4 -6 gherkins, chopped

  • 2/3 cup favourite basic vinaigrette
  • 1 tablespoon dijon mustard
  • 1 garlic clove, crushed

Recipe

  • 1 dressing: place the basic vinaigrette, mustard and crushed garlic in a screw top container. whisk to combine. seal with lid.
  • 2 cut green beans into short lengths. bring a small pan of water to the boil, add the beans and cook for 2 minutes. drain and rinse under cold water then leave in a bowl of iced water until cold. drain well.
  • 3 place all the salad ingredients, including herbs in a large bowl. season with salt and freshly ground black pepper, to taste, and mix until well combined.
  • 4 when ready to serve just shake container of dressing to refresh, drizzle over salad and toss to combine. transfer to a large serving bowl or platter.

  • 11 cups water
  • 1/2 lb bacon, chopped
  • 1 large onion, chopped
  • 2 garlic cloves, minced

  • 2/3 cup maple syrup
  • 1 tablespoon molasses
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon worcestershire sauce
  • 1 pinch baking soda

  • 1 wash and sort beans. pour 6 cups of water over them in a large saucepan. let stand overnight.
  • 2 bring the beans to a boil and boil for two minutes. drain and add 5 cups of water. boil again and reduce heat. cover and simmer for 1/2 hour. drain and reserve 1/2 cup of water.
  • 3 sauté the bacon until not quite crisp. add the onion and garlic and cook until soft.
  • 4 preheat oven to 250°f
  • 5 in a large casserole with a tight lid, place the onions, garlic, bacon, beans and the pan drippings. add the reserved water and remaining ingredients. mix well.

  • 1 in a large enamel casserole dish with a tight-fitting lid, warm oil on medium heat and gently brown chicken pieces on all sides, skin side first. when they are a rich golden colour, remove and set aside.

  • 8 cherry tomatoes

  • 1 trim the beans, cut them in half and then boil in a small pan of water for two minutes.
  • 2 drain and cool with some cold water.

  • 5 mix the onion and balsamic vinegar together in a bowl.

  • 2 (8 ounce) cans enchilada sauce
  • 4 slices fat free cheese (your choice)

  • 1 sautee onions in a pan. once they are done, add boca meat and heat on the stove at medium heat.
  • 2 add taco seasoning with a little bit of water -- let meat soak it up.
  • 3 add beans and rotel to the mixture.
  • 4 meanwhile, spray a square baking pan.
  • 5 lay out the four tortillas and add a slice of cheese to each.
  • 6 divide meat/bean mixture among the tortillas. wrap them and put in the baking dish.

Louisiana Stuffed Bell Peppers

  • 1/2 lb hot italian sausage, removed from casing

  • 1 tablespoon olive oil (or vegetable oil)

Recipe

  • 1 in a large saucepan, brown the sausage and drain the fat.
  • 2 add the water, olive oil, and zatarain's black beans & rice mix to sausage. bring to a boil and stir.
  • 3 cover and simmer over low heat for 25 minutes. remove from heat.
  • 4 while the rice is cooking, cut the bell peppers in half from the stem to the bottom, leaving the stem in tact (but sliced in two). remove the ribs and seeds.
  • 5 spoon the black bean mixture into pepper cavities in even portions. place on a baking sheet and bake for 40 minutes.
  • 6 after 35 minutes remove the peppers and top with cheese. finish baking until cheese is melted.

Insalata Primavera (italian Spring Salad)

  • 1 pour 1/4 of the enchilada sauce into a shallow bowl. one at a time, dip a tortilla in the sauce, making sure each side is wet. transfer to a plate and fill the center of each tortilla with a handful of chicken and then 3 tablespoons of beans. sprinkle with some cheese and roll up. lay the tortilla seam side down in a shallow baking pan. repeat the process until all eight are in the pan. pour the remaining enchilada sauce over the rolled tortillas and then sprinkle with the remaining cheese. bake at 350 for 20 minutes or until the cheese melts.

  • 1 tablespoon chili powder
  • 4 cups chicken broth
  • 1/3 cup tomato sauce
  • 1/2 cup black beans

  • 1 start off by chopping up the raw chicken into small strips or roughly chop it into small, uneven pieces. in large pot, heat about 2 tablespoons of olive oil on medium-high. throw chicken into the pot stirring occasionally.
  • 2 as the chicken cooks, finely chop the onion and garlic and throw into the pot once chicken is mostly .
  • 3 add oregano, cumin, and chili powder.
  • 4 stir in to mix the ingredients.
  • 5 at this point what i do is add lemon juice so it's properly incorporated into the dish.
  • 6 let chicken cook until finished (about 5 minutes at this point with frequent stirring).
  • 7 roughly chop the cilantro and tomato and add to chicken.
  • 8 let cook for about 5 minutes.
  • 9 you should start to notice a good amount of liquid in the pot from the oil, lemon, and tomato.
  • 10 this is when i add the tomato sauce and stir.
  • 11 again, i let sit for about 5 minutes.
  • 12 once it's all nicely incorporated, add the chicken broth.
  • 13 bring to a boil, then reduce to a simmer.
  • 14 add black beans.
  • 15 simmer for about 15 minutes.
  • 16 the soup should be an deep red color when finished.
  • 17 ladle into a bowl, add more fresh cilantro, cheese, and crushed tortilla chips. enjoy!
