Muskoka Baked Beans

Ingredients

- 1 lb dried bean
- 11 cups water
- 1/2 lb bacon, chopped
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 cup ketchup
- 2/3 cup maple syrup
- 1 tablespoon molasses
- 1 tablespoon dijon mustard
- 1/2 teaspoon chili flakes
- 1/2 teaspoon worcestershire sauce
- 1 pinch baking soda
Recipe
- 1 wash and sort beans. pour 6 cups of water over them in a large saucepan. let stand overnight.
- 2 bring the beans to a boil and boil for two minutes. drain and add 5 cups of water. boil again and reduce heat. cover and simmer for 1/2 hour. drain and reserve 1/2 cup of water.
- 3 sauté the bacon until not quite crisp. add the onion and garlic and cook until soft.
- 4 preheat oven to 250°f
- 5 in a large casserole with a tight lid, place the onions, garlic, bacon, beans and the pan drippings. add the reserved water and remaining ingredients. mix well.
- 6 cover and bake, stirring occasionally, for 2 hours. uncover and bake until tender and slightly thick, about another 30 minutes.
