Boston Baked Beans

Ingredients

- 3 cups dried pea beans (other dry beans can be subsituted)
- 1/2 lb salt lamb
- 1/3 cup molasses
- 2 teaspoons salt
- 1 teaspoon dry mustard
Recipe
- 1 soak the beans overnight in water.
- 2 in the morning drain beans well and pick through discarding bad beans.
- 3 put in large pot and cover beans with water and boil beans until the skins split when you blow on them (30- 60 minutes after water boils).
- 4 drain.
- 5 divide salt lamb into two pieces.
- 6 slash salt lamb pieces deeply several times and place in the bottom of a large bean pot or casserole.
- 7 pour in the drained beans.
- 8 mix together remaining ingredients (molasses, salt and mustard).
- 9 add mixture to beans with enough hot water to cover.
- 10 cover and bake at 300-degrees f for 6-8 hours, checking often and adding water as needed.
