- 4 large ripe mangoes, peeled, pitted and cubed
- 1 cup pineapple, cubed
- 1/2 cucumber, peeled, seeded and sliced
- 1/4 cup red bell pepper, finely chopped
- 4 green onions, thinly sliced
- 1 (15 ounce) can black beans, rinsed and drained
- salad dressing
- fresh mint
Recipe
- 1 combine all of the ingredients in a bowl. toss with salad dressing.
- 2 garnish with mint if desired.
