Lentil Chili

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 10
  • 1 lb lentils
  • 2 onions, chopped
  • 1 green pepper, chopped
  • 2 tablespoons garlic, chopped
  • 2 (15 1/2 ounce) cans red kidney beans, drained
  • 1 (15 1/2 ounce) can chopped tomatoes
  • 1 (6 ounce) can tomato paste
  • 2 tablespoons chili powder
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon cayenne
  • 1/2 teaspoon caraway seed
  • 1 dash liquid smoke (optional)
  • 5 -6 cups water

Recipe

  • 1 boil water and cook lentils for 30 min covered.
  • 2 add remaining ingredients cook covered for 30 min more.
  • 3 (optional) insert immersion blender and blend for a couple seconds to thicken up the chili but leave some "chunks".
