Ginger Chickpea Salad

Total Time: 1 hr 25 mins Preparation Time: 15 mins Cook Time: 1 hr 10 mins

Ingredients

  • Servings: 4
  • 250 g uncooked dried garbanzo beans, soaked for 4 hours
  • 1 small onion, finely diced
  • 1 red capsicum (bell pepper)
  • 2 tablespoons chopped parsley
  • 3 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 2 teaspoons lemon juice or 2 teaspoons lime juice
  • 1 small garlic clove, crushed
  • 1 teaspoon finely chopped fresh ginger

Recipe

  • 1 boil the chickpeas for 10 minutes, turn down the heat and simmer for 1 hour.
  • 2 while still warm, pour over the dressing then leave to cool.
  • 3 add the rest of the ingredients and serve.
