Greek Beef And Lentil Stew

Ingredients

  • Servings: 6
  • 1 lb boneless beef beef eye round, cubed
  • 3 cups beef broth
  • 1 (14 ounce) can diced tomatoes
  • 2 cups cubed potatoes
  • 2 cups cut green beans
  • 1 cup dried lentils
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried mint
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon coriander
  • 1 cup cubed zucchini
  • salt and pepper

Recipe

  • 1 combine all ingredients except zucchini, salt and pepper in slow cooker; cover and cook on low for 6-8 hours, adding zucchini during last 30 minutes.
  • 2 season to taste with salt and pepper.
