Jalupa

Total Time: 5 hrs 10 mins Preparation Time: 10 mins Cook Time: 5 hrs

Ingredients

  • 3 lbs lamb roast
  • 16 ounces dried pinto beans (pre-soak and cook) or 4 (16 ounce) cans pinto beans
  • 4 ounces green chilies (canned)
  • 2 tablespoons salt
  • 1 tablespoon oregano
  • 2 tablespoons chili powder
  • 1/2 teaspoon garlic
  • 1 teaspoon cumin
  • 1 onion, chopped

Recipe

  • 1 soak beans before cooking, if using dried beans. otherwise, mix spices together and rub on lamb roast and place in crock pot that has been lightly sprayed with nonstick cooking spray. add beans and chopped onion. cover and cook on low about 5 hours. shred the lamb roast and add back to the bean mixture.
  • 2 serve with cooked tortillas (or chips), sour cream, taco sauce & black olives. cheese optional.
