Cuban Black Bean Soup (crock Pot)

Ingredients

  • Servings: 8
  • 16 ounces dried black beans, sorted, rinsed (equivalent to 1 lb or 2 1/3 cups)
  • 1 cup ham, cooked and finely chopped
  • 1 cup onion, chopped
  • 1 cup tomato, chopped (1 large tomato)
  • 1 cup green bell pepper, chopped (1 medium bell pepper)
  • 3 garlic cloves, minced
  • 3 cups beef broth
  • 1 3/4 cups water
  • 1/4 cup dark rum or 1/4 cup apple cider
  • 2 tablespoons oil
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoons dried oregano

Recipe

  • 1 in 3 1/2 to 6-quart slow cooker, combine all ingredients; mix well.
  • 2 cover; cook on high setting for 6 to 8 hours.
