Kidney Bean Salad

Ingredients

  • Servings: 4
  • 1 lb kidney beans, rinsed and drained
  • 1 small tomato
  • 1/2 cucumber, cut in to small pieces with skin
  • 1 teaspoon dried cilantro
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon parsley flakes
  • 5 small green onions, sliced (green tops only)
  • 1 pinch salt
  • 1 pinch pepper
  • 1 dash cayenne pepper
  • 1 pinch crushed red pepper flakes
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons apple cider vinegar

Recipe

  • 1 rinse kidney beans in cold water, and drain well. place in medium glass bowl. add remaining ingredients, and stir lightly.
