Hot Sausage Links And Beans Casserole

Ingredients

• Servings: 4
• 2 tablespoons olive oil
• 2 cloves garlic, minced
• 1 cup chopped onion
• 1 teaspoon dried oregano
• 1 tablespoon chopped fresh parsley
• 1/4 teaspoon salt
• 1/2 teaspoon ground black pepper
• 4 potatoes, cookd,peeled and cubed
• 1/2 lb spicy smoked lamb sausage link, sliced
• 1/2 cup packed brown sugar
• 2 cups baked beans
• 1/4 cup barbecue sauce
• 1 cup shredded cheddar cheese

Recipe

• 1 preheat oven to 350*f (175*c).
• 2 in a medum skillet, heat 1 tbs of the olive oil over medium heat.
• 3 add the garlic and cook for 30 seconds.
• 4 stir in the onion, oregano, parsley, salt and peppr.
• 5 cook for 1 minute and remove from the heat.
• 6 grease the bottom of an 8x8x2inch baking dish with the remaining tbs olive oil.
• 7 on this layer the cubed cooked potatoes.
• 8 top the potatoes with the onion mixture.
• 9 on the onion mixture, evenly distribute the sliced hot links.
• 10 ina small bowl, combine the brown sugar, baked beans and the barbecue sauce.
• 11 pour this evenly over the sausage.
• 12 top with the shredded cheddar cheese.
• 13 place in the pre-heated oven for 45 minutes.
• 14 serves 4.
