Game Day Spicy Chicken Chili

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 tablespoon extra virgin olive oil
  • 1 onion, finely chopped (red or brown)
  • 4 large garlic cloves, minced
  • 1 lb ground chicken
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can kidney beans, drained
  • 1 (15 ounce) can pinto beans, drained
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon red pepper flakes
  • 2 teaspoons brown sugar
  • kosher salt, to taste
  • 1 bunch cilantro, stems discarded and leaved chopped

Recipe

  • 1 in a large pot, heat the oil over medium- high heat. add the onions and garlic and cook until soft and fragrant, about 2 minutes.
  • 2 turn the heat up to high and add the ground chicken. break it up into small pieces and cook until no longer pink.
  • 3 add the tomatoes, beans, spices and brown sugar. add salt, to taste.
  • 4 remove from the heat and stir in the cilantro. serve immediately.
