Game Day Spicy Chicken Chili

Ingredients

- 1 tablespoon extra virgin olive oil
- 1 onion, finely chopped (red or brown)
- 4 large garlic cloves, minced
- 1 lb ground chicken
- 1 (15 ounce) can diced tomatoes
- 1 (15 ounce) can kidney beans, drained
- 1 (15 ounce) can pinto beans, drained
- 1 tablespoon chipotle chili powder
- 1 teaspoon cayenne pepper
- 1/2 teaspoon red pepper flakes
- 2 teaspoons brown sugar
- kosher salt, to taste
- 1 bunch cilantro, stems discarded and leaved chopped
Recipe
- 1 in a large pot, heat the oil over medium- high heat. add the onions and garlic and cook until soft and fragrant, about 2 minutes.
- 2 turn the heat up to high and add the ground chicken. break it up into small pieces and cook until no longer pink.
- 3 add the tomatoes, beans, spices and brown sugar. add salt, to taste.
- 4 remove from the heat and stir in the cilantro. serve immediately.
