Maple Rhubarb Jam

Total Time: 1 hr 40 mins Preparation Time: 10 mins Cook Time: 1 hr 30 mins

Ingredients

  • 1 1/2-2 lbs rhubarb, cut in 1 inch pieces
  • 1/2 cup sugar
  • 1/2 cup pure maple syrup
  • 1/4 cup wine (optional)
  • 1 tablespoon lemon juice
  • 1 vanilla bean, split

Recipe

  • 1 in a baking dish, stir together rhubarb, sugar, maple syrup, wine, lemon juice and vanilla bean.
  • 2 bake on lower rack of 350* oven, stirring once gently, until bubbly and thickened, about 90 minutes.
  • 3 let cool, scrape vanilla bean into jam and discard bean. stir to combine before serving.
