Maple Rhubarb Jam

Ingredients
- 1 1/2-2 lbs rhubarb, cut in 1 inch pieces
- 1/2 cup sugar
- 1/2 cup pure maple syrup
- 1/4 cup wine (optional)
- 1 tablespoon lemon juice
- 1 vanilla bean, split
Recipe
- 1 in a baking dish, stir together rhubarb, sugar, maple syrup, wine, lemon juice and vanilla bean.
- 2 bake on lower rack of 350* oven, stirring once gently, until bubbly and thickened, about 90 minutes.
- 3 let cool, scrape vanilla bean into jam and discard bean. stir to combine before serving.
