Florentine Bean Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 slices bacon, chopped
  • 3 garlic cloves, minced
  • 1 medium onion, chopped
  • 1 (14 ounce) can chopped spinach, drained
  • 3 (14 1/2 ounce) cans chicken broth
  • 1 (15 ounce) cannellini beans, rinsed and drained
  • 1 (15 ounce) red kidney beans, rinsed and drained
  • 1 (15 ounce) dark red kidney beans, rinsed and drained
  • 1/2 cup sun-dried tomato, cut into thin strips
  • 1 teaspoon dried basil
  • shredded parmesan cheese

Recipe

  • 1 brown bacon over high heat in a large stockpot, about 8 minutes. add garlic, and onion, saute about 6 minutes. add spinach, saute 2 minutes, mixing in browned bits. add beans and all remaining ingredients. simmer 10 minutes. garnish with parmesan if desired.
