Habas Con Jamon (beans And Ham)

Ingredients

  • Servings: 4
  • 3/4 ounce butter
  • 1 small onion, chopped
  • 6 ounces serrano ham or 6 ounces prosciutto, chopped
  • 2 garlic cloves, minced
  • 1 1/4 lbs fava beans (fresh or frozen)
  • 1/2 cup dry wine
  • 3/4 cup chicken stock

Recipe

  • 1 melt the butter in a large saucepan and stir in the onion, ham and garlic. cook over medium heat for 5 minutes, stirring often, until the onion softens.
  • 2 add the fava beans and the wine and cook over high heat until the liquid is reduced by half.
  • 3 add the stock, reduce the heat to low-medium and cook for 10 minutes. uncover and simmer for another 10 minutes or until the beans are tender and most of the liquid has evaporated.
  • 4 serve hot with crusty bread.
