Habas Con Jamon (beans And Ham)

Ingredients
- Servings: 4
- 3/4 ounce butter
- 1 small onion, chopped
- 6 ounces serrano ham or 6 ounces prosciutto, chopped
- 2 garlic cloves, minced
- 1 1/4 lbs fava beans (fresh or frozen)
- 1/2 cup dry wine
- 3/4 cup chicken stock
Recipe
- 1 melt the butter in a large saucepan and stir in the onion, ham and garlic. cook over medium heat for 5 minutes, stirring often, until the onion softens.
- 2 add the fava beans and the wine and cook over high heat until the liquid is reduced by half.
- 3 add the stock, reduce the heat to low-medium and cook for 10 minutes. uncover and simmer for another 10 minutes or until the beans are tender and most of the liquid has evaporated.
- 4 serve hot with crusty bread.
