Nicoise Pasta Salad

Ingredients

  • Servings: 8
  • 4 potatoes
  • 1/2 lb green beans, ends trimmed
  • 3 cups rotini pasta
  • 1 large tomato, cut into thin wedges
  • 1 small red onion, thinly sliced
  • 1 cup pitted black olives, halved
  • 1 (7 ounce) can tuna, solid light
  • 2 hard-boiled eggs, cut into 4 wedges each
  • 1/4 cup fresh basil, chopped
  • 1/4 cup red wine vinegar
  • 2 garlic cloves, minced
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup extra virgin olive oil

Recipe

  • 1 in pot of boiling salted water, cook potatoes for 20 minutes or until tender.
  • 2 remove with slotted spoon and cut into 1-inch squares.
  • 3 cook green beans in same pot for 2-3 minutes, or until tender crisp; drain and rinse under cold water.
  • 4 meanwhile, cook rotini in large pot of boiling salted water for 8 minutes or until tender but firm; drain and rinse lightly.
  • 5 in large bowl, toss together potatoes, green beans, rotini, tomato, onion, olives and tuna.
  • 6 in small bowl, whisk together basil, vinegar, garlic, mustard, salt and pepper.
  • 7 slowly whisk in oil.
  • 8 pour dressing over salad ingredients and toss gently to coat.
  • 9 serve garnished with wedge of egg.
