Nicoise Pasta Salad

Ingredients

- 4 potatoes
- 1/2 lb green beans, ends trimmed
- 3 cups rotini pasta
- 1 large tomato, cut into thin wedges
- 1 small red onion, thinly sliced
- 1 cup pitted black olives, halved
- 1 (7 ounce) can tuna, solid light
- 2 hard-boiled eggs, cut into 4 wedges each
- 1/4 cup fresh basil, chopped
- 1/4 cup red wine vinegar
- 2 garlic cloves, minced
- 1 tablespoon dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup extra virgin olive oil
Recipe
- 1 in pot of boiling salted water, cook potatoes for 20 minutes or until tender.
- 2 remove with slotted spoon and cut into 1-inch squares.
- 3 cook green beans in same pot for 2-3 minutes, or until tender crisp; drain and rinse under cold water.
- 4 meanwhile, cook rotini in large pot of boiling salted water for 8 minutes or until tender but firm; drain and rinse lightly.
- 5 in large bowl, toss together potatoes, green beans, rotini, tomato, onion, olives and tuna.
- 6 in small bowl, whisk together basil, vinegar, garlic, mustard, salt and pepper.
- 7 slowly whisk in oil.
- 8 pour dressing over salad ingredients and toss gently to coat.
- 9 serve garnished with wedge of egg.
