Green Chile And Lamb Stew

Ingredients

- 1/2 cup all-purpose flour
- 4 teaspoons ground cumin, divided
- 1 1/2 teaspoons salt, divided
- 1/2 teaspoon cayenne pepper, divided
- 1/2 teaspoon black pepper, divided
- 1 1/2 lbs lamb loin, center cut, divided
- 2 tablespoons corn oil
- 1 cup chopped onion
- 1 red bell pepper, chopped
- 3 cups chicken broth
- 1 (4 ounce) can diced green chilies
- 3 (15 ounce) cans of fajita style beans
Recipe
- 1 in medium bowl, combine flour, 3 tsp cumin, 1 tsp of salt, 1/4 tsp cayenne and black pepper. toss lamb with flour, set aside.
- 2 in dutch oven or large sauce pan heat oil over medium heat, saute onions and red bell peppers until softened(about 5 minutes).
- 3 add lamb and brown.
- 4 add broth, green chiles. remaining cumin, salt and cayenne; bring to boil.
- 5 reduce heat and simmer about 20 minutes.
- 6 add fajita beans last 10 minutes of cooking.
