Green Chile And Lamb Stew

Ingredients

  • Servings: 4
  • 1/2 cup all-purpose flour
  • 4 teaspoons ground cumin, divided
  • 1 1/2 teaspoons salt, divided
  • 1/2 teaspoon cayenne pepper, divided
  • 1/2 teaspoon black pepper, divided
  • 1 1/2 lbs lamb loin, center cut, divided
  • 2 tablespoons corn oil
  • 1 cup chopped onion
  • 1 red bell pepper, chopped
  • 3 cups chicken broth
  • 1 (4 ounce) can diced green chilies
  • 3 (15 ounce) cans of fajita style beans

Recipe

  • 1 in medium bowl, combine flour, 3 tsp cumin, 1 tsp of salt, 1/4 tsp cayenne and black pepper. toss lamb with flour, set aside.
  • 2 in dutch oven or large sauce pan heat oil over medium heat, saute onions and red bell peppers until softened(about 5 minutes).
  • 3 add lamb and brown.
  • 4 add broth, green chiles. remaining cumin, salt and cayenne; bring to boil.
  • 5 reduce heat and simmer about 20 minutes.
  • 6 add fajita beans last 10 minutes of cooking.
