Green Beans With Warm Bacon Dressing

Ingredients

- 1/2 lb green beans, cut into 2 inch pieces
- 2 slices bacon
- 1 tablespoon chopped shallot
- 2 teaspoons wine vinegar
Recipe
- 1 cook beans in a large pot of salted water until tender, about 8 minutes.
- 2 drain and transfer to a bowl.
- 3 while the beans are boiling, cook bacon in a medium skillet until crisp, about 8 minutes.
- 4 drain bacon on paper towels.
- 5 add shallot to skillet and saute 30 seconds.
- 6 remove from heat and cool slightly.
- 7 stir vinegar into shallot mixture.
- 8 season with salt and pepper.
- 9 pour dressing over green beans and toss until coated.
- 10 crumble bacon over.
