Green Beans With Warm Bacon Dressing

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1/2 lb green beans, cut into 2 inch pieces
  • 2 slices bacon
  • 1 tablespoon chopped shallot
  • 2 teaspoons wine vinegar

Recipe

  • 1 cook beans in a large pot of salted water until tender, about 8 minutes.
  • 2 drain and transfer to a bowl.
  • 3 while the beans are boiling, cook bacon in a medium skillet until crisp, about 8 minutes.
  • 4 drain bacon on paper towels.
  • 5 add shallot to skillet and saute 30 seconds.
  • 6 remove from heat and cool slightly.
  • 7 stir vinegar into shallot mixture.
  • 8 season with salt and pepper.
  • 9 pour dressing over green beans and toss until coated.
  • 10 crumble bacon over.
