Green Beans With Peanut

Ingredients

- 1 lb green beans, ends trimmed
- 1/2 cup smooth peanut butter or 1/2 cup chunky peanut butter (natural is best)
- 1 tablespoon packed dark brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon lemon juice
- 1 clove garlic, smashed
- 2 -3 slices peeled fresh ginger
- 1/2 cup hot water
Recipe
- 1 bring a large pot of lightly salted water to a boil over high heat.
- 2 add the green beans and cook until tender, about 5 minutes.
- 3 drain and rinse briefly under cold running water.
- 4 meanwhile, in a food processor, combine the peanut butter, brown sugar, soy sauce, lemon juice, garlic, and ginger.
- 5 process until smooth.
- 6 with the machine on, add the hot water and mix until blended.
- 7 transfer the beans to a serving dish.
- 8 pour the sauce over the beans and serve.
- 9 if you prefer the dish hotter, reheat in a microwave oven on high for 50 to 60 seconds, rotating the dish once.
- 10 (if you do this, be sure the serving dish is microwave-safe glass or ceramic).
