Green Beans With Peanut

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 lb green beans, ends trimmed
  • 1/2 cup smooth peanut butter or 1/2 cup chunky peanut butter (natural is best)
  • 1 tablespoon packed dark brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 1 clove garlic, smashed
  • 2 -3 slices peeled fresh ginger
  • 1/2 cup hot water

Recipe

  • 1 bring a large pot of lightly salted water to a boil over high heat.
  • 2 add the green beans and cook until tender, about 5 minutes.
  • 3 drain and rinse briefly under cold running water.
  • 4 meanwhile, in a food processor, combine the peanut butter, brown sugar, soy sauce, lemon juice, garlic, and ginger.
  • 5 process until smooth.
  • 6 with the machine on, add the hot water and mix until blended.
  • 7 transfer the beans to a serving dish.
  • 8 pour the sauce over the beans and serve.
  • 9 if you prefer the dish hotter, reheat in a microwave oven on high for 50 to 60 seconds, rotating the dish once.
  • 10 (if you do this, be sure the serving dish is microwave-safe glass or ceramic).
