Green Beans-canning-hot Pack

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 2 1/2-3 lbs young tender green beans
  • 1 teaspoon salt
  • 4 -5 cups boiling water

Recipe

  • 1 wash beans.
  • 2 drain.
  • 3 trim ends and remove strings.
  • 4 cut into 2 inch pieces.
  • 5 boil for 5 minutes.
  • 6 pack into clean hot jars leaving 1 inch head space.
  • 7 add salt.
  • 8 ladle boiling water over beans-again leaving 1 inch head space.
  • 9 remove bubbles.
  • 10 wipe rims and adjust 2 piece caps.
  • 11 process quarts 25 minutes at 10 pounds pressure.
  • 12 **if you wish to can in pints use 1/2 t salt and process 20 minutes at 10 pounds pressure.
