Garlic Vinaigrette Over Green Beans

Ingredients

- 1/2 teaspoon grated fresh lemon rind
- 1 tablespoon fresh lemon juice
- 2 teaspoons extra virgin olive oil
- 1 teaspoon dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper
- 2 cloves garlic, smashed
- 2 1/2 lbs green beans, trimmed
- 1/3 cup toasted almond, sliced
- 1 tablespoon fresh thyme leaves, chopped or 1 teaspoon dried thyme leaves
Recipe
- 1 vinaigrette: combine first 7 ingredients in a small bowl, (from lemon rind to garlic), stir to mix with a whisk.
- 2 beans: cook beans in a large pot of boiling water, 4 minutes or until crisp tender.
- 3 drain well.
- 4 place beans in a large bowl, add lemon mixture, toss well to coat.
- 5 sprinkle with almonds and thyme.
