Garlic Vinaigrette Over Green Beans

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 12
  • 1/2 teaspoon grated fresh lemon rind
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 2 cloves garlic, smashed
  • 2 1/2 lbs green beans, trimmed
  • 1/3 cup toasted almond, sliced
  • 1 tablespoon fresh thyme leaves, chopped or 1 teaspoon dried thyme leaves

Recipe

  • 1 vinaigrette: combine first 7 ingredients in a small bowl, (from lemon rind to garlic), stir to mix with a whisk.
  • 2 beans: cook beans in a large pot of boiling water, 4 minutes or until crisp tender.
  • 3 drain well.
  • 4 place beans in a large bowl, add lemon mixture, toss well to coat.
  • 5 sprinkle with almonds and thyme.
