Ingredients

- 1 large onion, chopped
- 1 shallot, chopped (or more if you like)
- 1 garlic clove, chopped (or more if you like)
- 1 1/4 cups green lentils
- 14 ounces chickpeas, drained and rinsed
- 14 ounces diced tomatoes
- 1 1/2 cups vegetable stock
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon ginger
- 1 tablespoon olive oil
Recipe
- 1 fry onions in oil until lightly browned.
- 2 add shallot, garlic, onion, spices, lentils, tomatoes and vegetable stock.
- 3 simmer for 30 minutes.
- 4 add chickpeas.
- 5 simmer for 30 minutes.
- 6 enjoy!
