Jamaican Bananas

Ingredients

- 8 firm bananas
- 1/2 cup unsalted butter
- 1 lemon (juice of, and grated rind)
- 2 oranges (juice of and grated rind)
- 1 cup firmly packed dark brown sugar
- 1/2 cup dark rum
Recipe
- 1 add butter and rinds to a heavy skillet and melt over low heat, stirring well.
- 2 add some of the sugar and stir until the mixture is smooth.
- 3 add juices and continue cooking. add the remaining sugar and cook until it melts and blends with the other ingredients.
- 4 add rum a little at a time and bring to a slow boil. peel the bananas and poach in the sauce turning frequently.
- 5 cook about 5 minutes until they are tender but not mushy.
