Cracow Pastry Layer Cake

Ingredients
- 10 ounces butter
- 10 ounces flour
- 5 ounces almonds, ground
- 4 egg yolks, hard boiled
- 5 ounces caster sugar
- 1/2 vanilla bean, ground to powder
- 4 egg whites, beaten stiff
- 4 ounces caster sugar
- 8 ounces apricot jam, sieved
- 5 ounces caster sugar
- 5 ounces apricot jam
- 1 tablespoon lemon juice
- 15 almond halves
Recipe
- 1 cream butter and sugar add eggs.
- 2 add vanilla bean
- 3 add flour and ground almonds
- 4 quickly knead pastry dough
- 5 divide dough in 5 parts
- 6 roll out
- 7 bake 4 or 5 thin round layers in a baking pan in turns
- 8 the layers should not be browned to much
- 9 but should be slightly golden
- 10 im guessin 375 for 10 minutes
- 11 filling
- 12 add sugar to egg whites cream until fluffy.
- 13 add sieved jam fold in
- 14 icing beat together everything but almonds
- 15 spread filling thinly betweeen layers
- 16 cover with icing
- 17 decorate with rosettes made from almond halves
- 18 best made 4 days in advance , so it matures and becomes crubly as hapiness.
