Jamaican Chilled Avocado Soup W/ Fresh Ginger And Lime Crema

Ingredients

  • 1/4 cup butter
  • 1 cup onion, finely chopped
  • 2 1/2 teaspoons fresh ginger, peeled and grated
  • 2 large avocados, peeled and mashed
  • 4 teaspoons fresh lime juice
  • 1 1/2 cups chicken stock
  • 1/2 teaspoon black pepper
  • 1 green onion, finely chopped
  • 1/2 cup half-and-half
  • 1/4 cup sour cream
  • 2 teaspoons fresh lime juice
  • 1/4 teaspoon garlic, minced
  • 1/4 teaspoon salt

Recipe

  • 1 to make the soup: melt butter in a saucepan and cook the onions for about 4 min, until softened.
