- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, whole kernel corn with bell peppers, drained
- 1 large tomato, seeded and diced
- 1 medium mango, peeled, seeded and diced
- 1/4 cup onion, chopped
- 1/4 cup fresh cilantro, coarsley chopped
- 1/4 cup olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
Recipe
- 1 in a medium bowl, combine black beans, corn, tomato, mango, onion, cilantro, olive oil, lime juice, garlic powder, and salt.
- 2 serve with baked tortilla or pita chips.
