Mango Black Bean Salsa

Ingredients

  • Servings: 6
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, whole kernel corn with bell peppers, drained
  • 1 large tomato, seeded and diced
  • 1 medium mango, peeled, seeded and diced
  • 1/4 cup onion, chopped
  • 1/4 cup fresh cilantro, coarsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin

Recipe

  • 1 in a medium bowl, combine black beans, corn, tomato, mango, onion, cilantro, olive oil, lime juice, garlic powder, and salt.
  • 2 serve with baked tortilla or pita chips.
