Linguine With Beans & Shrimp

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1/2 onion, chopped
  • 1 garlic clove, crushed
  • 2 teaspoons maple syrup
  • 1 (14 ounce) can chopped tomatoes
  • 1 (28 ounce) can beans, rinsed & drained
  • 2 cups arugula
  • 3/4 lb shrimp, cooked
  • salt (to taste)
  • pepper (to taste)
  • 1 lb linguine, cooked

Recipe

  • 1 heat olive oil in a large frying pan and cook onion until soft.
  • 2 add garlic and stir to soften.
  • 3 stir in maple syrup and tomatoes.
  • 4 cook gently for about 10 minutes, stirring occasionally.
  • 5 add beans and arugula and cook on low heat until arugula wilts.
  • 6 add a little water if mixture gets too thick.
  • 7 stir in shrimp.
  • 8 season to taste with salt and pepper.
  • 9 serve over linguine.
