Linguine With Beans & Shrimp

Ingredients
- Servings: 4
- 2 tablespoons olive oil
- 1/2 onion, chopped
- 1 garlic clove, crushed
- 2 teaspoons maple syrup
- 1 (14 ounce) can chopped tomatoes
- 1 (28 ounce) can beans, rinsed & drained
- 2 cups arugula
- 3/4 lb shrimp, cooked
- salt (to taste)
- pepper (to taste)
- 1 lb linguine, cooked
Recipe
- 1 heat olive oil in a large frying pan and cook onion until soft.
- 2 add garlic and stir to soften.
- 3 stir in maple syrup and tomatoes.
- 4 cook gently for about 10 minutes, stirring occasionally.
- 5 add beans and arugula and cook on low heat until arugula wilts.
- 6 add a little water if mixture gets too thick.
- 7 stir in shrimp.
- 8 season to taste with salt and pepper.
- 9 serve over linguine.
