My Best Roast Chicken With Extras

Ingredients
- Servings: 4
- 1 roasting chicken
- 1 lemon
- 1 tablespoon dried herbs (rosemary, thyme, ect.)
- 2 teaspoons garlic salt (or to taste)
- 1 teaspoon pepper (or to taste)
- 2 potatoes, cut in chunks
- 2 sweet potatoes, cut in chunks
- 2 carrots, cut in chunks
- 2 onions, cut in chunks
- 1/2 lb fresh green beans, trimmed
- 3 garlic cloves, cracked
- 1/3 cup water
- cooking spray
Recipe
- 1 preheat oven to 425 degrees.
- 2 spray a 9 x 13 glass baking dish with cooking spray.
- 3 place vegetables, onions, and garlic in the pan (if using green beans place them on the top of the root vegetables). sprinkle with pepper.
- 4 add water to the pan.
- 5 place chicken breast side up on top of the vegetables.
- 6 sprinkle the chicken with 1/2 of the garlic salt, pepper and herbs.
- 7 squeeze 1/2 of the lemon on top of the chicken.
- 8 turn chicken over and repeat seasonings.
- 9 grate the zest of 1/2 the lemon on top of the chicken.
- 10 place the lemon inside of the chicken cavity.
- 11 spray the chicken lightly with cooking spray.
- 12 cover tightly with aluminum foil and place in the oven.
- 13 cook for 1 hour covered.
- 14 continue cooking uncovered until chicken is done.
