Indian Split Pea Soup

Total Time: 1 hr 25 mins Preparation Time: 10 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 6
  • 2 cups yellow split peas
  • 8 cups water or 8 cups stock
  • 2 tablespoons sunflower oil
  • 1 cup diced onion
  • 1 1/2 tablespoons minced garlic
  • 1 tablespoon minced fresh ginger
  • 1 1/2 cups chopped kale
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/8 teaspoon cayenne pepper
  • 1 teaspoon salt

Recipe

  • 1 wash peas. add water or stock in a soup pot.
  • 2 bring to a boil and cook on low heat for 45 minutes, half covered with lid, stirring occasionally.
  • 3 heat the oil in a fry pan and sauté the onions, garlic and ginger until lightly browned and tender.
  • 4 add to split peas along with all of the remaining ingredients.
  • 5 lower heat and simmer, cover and continue to cook 30 minutes longer, stirring occasionally.
