Indian Split Pea Soup

Ingredients

- 2 cups yellow split peas
- 8 cups water or 8 cups stock
- 2 tablespoons sunflower oil
- 1 cup diced onion
- 1 1/2 tablespoons minced garlic
- 1 tablespoon minced fresh ginger
- 1 1/2 cups chopped kale
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/8 teaspoon cayenne pepper
- 1 teaspoon salt
Recipe
- 1 wash peas. add water or stock in a soup pot.
- 2 bring to a boil and cook on low heat for 45 minutes, half covered with lid, stirring occasionally.
- 3 heat the oil in a fry pan and sauté the onions, garlic and ginger until lightly browned and tender.
- 4 add to split peas along with all of the remaining ingredients.
- 5 lower heat and simmer, cover and continue to cook 30 minutes longer, stirring occasionally.
