Ingredients

- 2 cups canned black beans, rinsed
- 2 cups cooked rice
- 1 1/2 cups chopped fresh cilantro
- 1/4 cup fresh squeezed lime juice
- 3/4 cup olive oil
- 1/2 cup chopped onion
- 2 cloves garlic
- salt & fresh ground pepper
Recipe
- 1 in medium bowl combine beans, rice, and cilantro.
- 2 place lime juice in small bowl and whisk with oil.
- 3 add onion and garlic to oil.
- 4 toss with beans and rice mixture.
- 5 add salt and pepper to taste.
