Hot Black Bean Dip

Total Time: 2 hrs Preparation Time: 30 mins Cook Time: 1 hr 30 mins

Ingredients

  • 2 (15 ounce) cans black beans, drained
  • 1 (10 ounce) can rotel tomatoes, in sauce
  • 3 chipotle chiles in adobo, finely chopped
  • 1 tablespoon adobo sauce
  • 3 tablespoons finely chopped onions
  • 1/2 teaspoon dried oregano
  • 2 tablespoons chopped fresh cilantro
  • 2 garlic cloves, minced
  • 1 lime, juice of
  • 1/2 cup crumbled feta cheese (or cheese of your choice)

Recipe

  • 1 mix together the first 9 ingredients in a slow cooker.
  • 2 cover and cook on high for 1 hour.
  • 3 gently smash the beans along the side of the crockery.
  • 4 sprinkle with cheese, cover, and cook for 30 more minutes.
  • 5 serve with tortilla chips.
