Green Beans With Shallot Butter

Ingredients

- 3 lbs fresh green beans, rinsed and trimmed
- 1/2 cup butter
- 1 tablespoon olive oil
- 2/3 cup thinly sliced shallot
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/3 cup fresh parsley, chopped
Recipe
- 1 in a small skillet, melt 1/4 cup butter with olive oil over medium heat.
- 2 add shallots and cook for 7-9 minutes over low heat, stirring occasionally, until tender.
- 3 stir in remaining butter, salt and pepper and remove from heat.
- 4 cook green beans uncovered in a large pot of boiling water 5-7 minutes or until crisp-tender.
- 5 drain well and transfer to a serving bowl.
- 6 add shallot butter and parsley and toss to coat.
- 7 garnish with toasted almonds if desired and serve.
