Mama Rita's Enchiladas

Ingredients
- Servings: 4
- 1 lb ground beef
- 2 teaspoons chili powder
- 1/2 onion, chopped
- 8 ounces salsa
- 16 ounces tomato sauce
- 16 ounces monterey jack cheese, shredded
- 16 ounces refried beans
- 12 tortillas
Recipe
- 1 brown beef with onion in frying pan.
- 2 drain off fat.
- 3 add chili powder, mix well.
- 4 mix salsa and tomato sauce well in small pot, heat thoroughly.
- 5 assemble enchiladas with 1 heaping tablespoon refried beans and 2 tablespoons of meat mixture. roll each enchilada and place in baking pan with seam side down.
- 6 after all are filled spread salsa mix on top.
- 7 top with cheese.
- 8 bake in preheated oven at 350 degrees for 20 minutes or until hot.
