Mama Rita's Enchiladas

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb ground beef
  • 2 teaspoons chili powder
  • 1/2 onion, chopped
  • 8 ounces salsa
  • 16 ounces tomato sauce
  • 16 ounces monterey jack cheese, shredded
  • 16 ounces refried beans
  • 12 tortillas

Recipe

  • 1 brown beef with onion in frying pan.
  • 2 drain off fat.
  • 3 add chili powder, mix well.
  • 4 mix salsa and tomato sauce well in small pot, heat thoroughly.
  • 5 assemble enchiladas with 1 heaping tablespoon refried beans and 2 tablespoons of meat mixture. roll each enchilada and place in baking pan with seam side down.
  • 6 after all are filled spread salsa mix on top.
  • 7 top with cheese.
  • 8 bake in preheated oven at 350 degrees for 20 minutes or until hot.
