Crostini Con Cannellini

Total Time: 37 mins Preparation Time: 25 mins Cook Time: 12 mins

Ingredients

  • 1 loaf french bread
  • 1/2 cup olive oil
  • 3 -4 sprigs rosemary
  • 1 (15 ounce) can cannellini beans, drained and rinsed
  • 1 cup grated parmesan cheese or 1 cup romano cheese
  • 1/3 cup fresh basil, coarsely chopped
  • 1 small lemon, zested and juiced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika
  • chopped bacon

Recipe

  • 1 cut bread into 1/2 inch thick slices and brush one side with olive oil.
  • 2 bake at 400 for 10-12 minutes or until toasted.
  • 3 meanwhile, in a food processor, combine beans, cheese, basil, lemon zest and juice, salt and pepper.
  • 4 mix until chunky, then add olive oil in a steady stream until mixture becomes smooth.
  • 5 spread mixture onto toasted bread and top with bacon.
  • 6 sprinkle with paprika and serve warm.
  • 7 garnish with basil if desired.
