Crostini Con Cannellini

Ingredients
- 1 loaf french bread
- 1/2 cup olive oil
- 3 -4 sprigs rosemary
- 1 (15 ounce) can cannellini beans, drained and rinsed
- 1 cup grated parmesan cheese or 1 cup romano cheese
- 1/3 cup fresh basil, coarsely chopped
- 1 small lemon, zested and juiced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon paprika
- chopped bacon
Recipe
- 1 cut bread into 1/2 inch thick slices and brush one side with olive oil.
- 2 bake at 400 for 10-12 minutes or until toasted.
- 3 meanwhile, in a food processor, combine beans, cheese, basil, lemon zest and juice, salt and pepper.
- 4 mix until chunky, then add olive oil in a steady stream until mixture becomes smooth.
- 5 spread mixture onto toasted bread and top with bacon.
- 6 sprinkle with paprika and serve warm.
- 7 garnish with basil if desired.
