Ingredients
- Servings: 6
- 1/2 lb red lentil, washed and picked over
- 1 quart water
- 1/2 cup olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1/2 teaspoon fennel seed, crushed
- salt (optional)
Recipe
- 1 place lentils and water in a large pot.
- 2 bring to a boil and boil for 5 minutes.
- 3 remove from heat and set aside to soak for 1 hour.
- 4 return pot to heat.
- 5 add oil, onion, garlic and fennel.
- 6 simmer gently for 35 minutes, or until lentils are tender.
- 7 season with salt if desired.
