Lentils And Spinach

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 1 1/4 lbs chopped fresh spinach or 1 1/4 lbs frozen chopped spinach
  • 1 medium onion, sliced in half rings
  • 5 tablespoons oil
  • 2 minced garlic cloves
  • 1 cup red lentil
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon black pepper

Recipe

  • 1 heat onion and garlic for 2 min.
  • 2 add lentils and 3 cups water and bring to a boil.
  • 3 cover and simmer on low for 25 min.
  • 4 add spinach, salt, cumin and bring to simmer for another 5 minutes.
