Lentils And Spinach

Ingredients
- Servings: 4
- 1 1/4 lbs chopped fresh spinach or 1 1/4 lbs frozen chopped spinach
- 1 medium onion, sliced in half rings
- 5 tablespoons oil
- 2 minced garlic cloves
- 1 cup red lentil
- 1 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon black pepper
Recipe
- 1 heat onion and garlic for 2 min.
- 2 add lentils and 3 cups water and bring to a boil.
- 3 cover and simmer on low for 25 min.
- 4 add spinach, salt, cumin and bring to simmer for another 5 minutes.
