Lentil Vegetable Soup

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 8
  • 2 cups brown lentils
  • 2 -4 slices bacon, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup carrot, chopped
  • 3 tablespoons dried parsley
  • 1 -2 garlic clove, minced
  • 2 1/2 tablespoons salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano, crushed
  • 2 cups canned tomatoes, crushed
  • 2 tablespoons red wine vinegar

Recipe

  • 1 lightly sauté bacon & onion in stock pot.
  • 2 add 8c water & next 7 ingredients.
  • 3 cover & simmer 1½ hours.
  • 4 add tomatoes, wine vinegar; simmer 30 min more
  • 5 season to taste.
