Lentil Vegetable Soup

Ingredients
- Servings: 8
- 2 cups brown lentils
- 2 -4 slices bacon, chopped
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1/2 cup carrot, chopped
- 3 tablespoons dried parsley
- 1 -2 garlic clove, minced
- 2 1/2 tablespoons salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon dried oregano, crushed
- 2 cups canned tomatoes, crushed
- 2 tablespoons red wine vinegar
Recipe
- 1 lightly sauté bacon & onion in stock pot.
- 2 add 8c water & next 7 ingredients.
- 3 cover & simmer 1½ hours.
- 4 add tomatoes, wine vinegar; simmer 30 min more
- 5 season to taste.
