Lentil And Ginger Soup

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups red lentils
  • 1 1/2 liters water
  • 2 carrots, larced, finely diced
  • 2 tablespoons ginger
  • 1/3 cup miso

Recipe

  • 1 rinse lentils and add to the pan with water.
  • 2 bring to the boil and then reduce to a simmer for 15 minutes.
  • 3 spoon off any scum or froth from the surface.
  • 4 add the carrot and ginger and continue to cook for a further 15 minutes.
  • 5 mix the miso paste in half a cup of water until smooth and pour into the soup.
  • 6 return to the boil then turn off.
  • 7 serve immediately.
