Hummus Bi Tahini

Ingredients

- 1 cup dried garbanzo beans (soak overnight and drain)
- 1/2 cup olive oil
- 1 tablespoon olive oil
- 1/2 teaspoon ground cumin
- 1 pinch ground cayenne pepper
- 2 1/2 tablespoons lemon juice
- 1 tablespoon sesame butter (tahini)
- 2 garlic cloves
- salt
Recipe
- 1 cook chickpeas in a saucepan at moderate heat for 1 hour or until tender. drain.
- 2 in the same saucepan, add 1 tbsp olive oil, cumin, cayenne pepper. saute at high heat for 1 minute. drain.
- 3 puree in a blender to a smooth paste.
- 4 add remaining ingredients and mix well.
