Hummus Bi Tahini

Total Time: 26 hrs Preparation Time: 24 hrs Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 1 cup dried garbanzo beans (soak overnight and drain)
  • 1/2 cup olive oil
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • 1 pinch ground cayenne pepper
  • 2 1/2 tablespoons lemon juice
  • 1 tablespoon sesame butter (tahini)
  • 2 garlic cloves
  • salt

Recipe

  • 1 cook chickpeas in a saucepan at moderate heat for 1 hour or until tender. drain.
  • 2 in the same saucepan, add 1 tbsp olive oil, cumin, cayenne pepper. saute at high heat for 1 minute. drain.
  • 3 puree in a blender to a smooth paste.
  • 4 add remaining ingredients and mix well.
