Huevos Rancheros

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 15 ounces black beans, rinsed and drained
  • 1 1/4 cups salsa
  • 4 eggs
  • 3 ounces mexican cheese, shredded
  • tortilla (optional)

Recipe

  • 1 in 10-inch skillet, mix black beans, salsa, and 1/4 cup water. heat to boiling over high heat, stirring frequently.
  • 2 break eggs, one at a time, into a custard cup and slip onto top of bean mixture. reduce heat to med-low; cover. simmer until are completely set, and yolks begin to thicken, about 5 minutes.
  • 3 to serve, sprinkle bean mixture and eggs with cheese.
