French Chicken With Balsamic Vinegar (crock Pot)

Ingredients
- Servings: 6
- 2 1/2 lbs boneless skinless chicken breast halves (about 6)
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 (15 1/2 ounce) can cannellini beans, rinsed and drained
- 1 large yellow bell pepper, chopped coarsely
- 1 1/2 tablespoons balsamic vinegar
- 1 teaspoon dried oregano
- 1 tablespoon garlic, minced
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons parsley, chopped
Recipe
- 1 place chicken in the bottom of the crockpot.
- 2 combine remaining ingredients, except parsley, and place on top of chicken.
- 3 cover crockpot and cook on low for 6-8 hours or until chicken is cooked through.
- 4 serve garnished with chopped parsley.
