Couscous, Corn And Lima Bean Saute

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 large onion, chopped (1 cup)
  • 1 garlic clove, finely chopped
  • 1 (12 ounce) box whole wheat couscous
  • 1 (9 ounce) box frozen whole kernel corn, thawed
  • 2 (9 ounce) boxes frozen baby lima beans, thawed
  • 2 cups water
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/3 cup slivered almonds, toasted

Recipe

  • 1 in a 12" skillet, melt butter over medium-high heat.
  • 2 add onion and garlic; cook about 2 minutes, stirring occasionally, until onion is crisp-tender.
  • 3 stir in remaining ingredients except almonds.
  • 4 heat to boiling over high heat.
  • 5 remove from heat; let stand 5 minutes.
  • 6 fluff before serving.
  • 7 sprinkle with almonds.
