Couscous, Corn And Lima Bean Saute

Ingredients

- 1 tablespoon butter or 1 tablespoon margarine
- 1 large onion, chopped (1 cup)
- 1 garlic clove, finely chopped
- 1 (12 ounce) box whole wheat couscous
- 1 (9 ounce) box frozen whole kernel corn, thawed
- 2 (9 ounce) boxes frozen baby lima beans, thawed
- 2 cups water
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/3 cup slivered almonds, toasted
Recipe
- 1 in a 12" skillet, melt butter over medium-high heat.
- 2 add onion and garlic; cook about 2 minutes, stirring occasionally, until onion is crisp-tender.
- 3 stir in remaining ingredients except almonds.
- 4 heat to boiling over high heat.
- 5 remove from heat; let stand 5 minutes.
- 6 fluff before serving.
- 7 sprinkle with almonds.
