My Farmer's Market Soup

Total Time: 4 hrs 15 mins Preparation Time: 15 mins Cook Time: 4 hrs

Ingredients

  • Servings: 6
  • 2 cups 15 bean mix (or any dried beans)
  • 1 ham hock
  • 1 quart water
  • 1 teaspoon salt
  • 1 medium onion, chopped
  • 3 garlic cloves, chopped
  • 1 (10 ounce) can rotel (mild or hot, your choice)
  • 1 (14 1/2 ounce) can diced tomatoes

Recipe

  • 1 soak bean mix over night in water, be sure that the beans are good and covered with water because they will expand.
  • 2 drain bean mix and put into a dutch oven with 1 qt or so of fresh water.
  • 3 be sure water is at least a inch over the beans.
  • 4 add ham hock.
  • 5 add onion and garlic.
  • 6 cook at a simmer for 2 1/2 to 3 hours, covered.
  • 7 add rotel and tomatoes.
  • 8 cook for 30 more minutes or until your cornbread is done.
  • 9 you may add some diced ham if you like.
