My Farmer's Market Soup

Ingredients
- Servings: 6
- 2 cups 15 bean mix (or any dried beans)
- 1 ham hock
- 1 quart water
- 1 teaspoon salt
- 1 medium onion, chopped
- 3 garlic cloves, chopped
- 1 (10 ounce) can rotel (mild or hot, your choice)
- 1 (14 1/2 ounce) can diced tomatoes
Recipe
- 1 soak bean mix over night in water, be sure that the beans are good and covered with water because they will expand.
- 2 drain bean mix and put into a dutch oven with 1 qt or so of fresh water.
- 3 be sure water is at least a inch over the beans.
- 4 add ham hock.
- 5 add onion and garlic.
- 6 cook at a simmer for 2 1/2 to 3 hours, covered.
- 7 add rotel and tomatoes.
- 8 cook for 30 more minutes or until your cornbread is done.
- 9 you may add some diced ham if you like.
