Indian Lentil Soup

Ingredients

- 1/2 cup chopped onion
- 1 garlic clove
- 2 teaspoons curry powder
- 1 teaspoon crushed coriander seed
- 1 teaspoon crushed cumin seed
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon crushed red pepper flakes
- 1 tablespoon olive oil
- 5 cups vegetable stock
- 4 cups water
- 2 cups dried lentils, sorted and rinsed
- salt and pepper
- 6 tablespoons plain fat-free yogurt
Recipe
- 1 sauté onion garlic, herbs and red pepper in oil in large saucepan until onion is tender, about 5 minutes; stirring frequently.
- 2 add stock, water and lentils; heat to boiling.
- 3 reduce heat and simmer, covered, until lentils are tender, about 30 minutes. season to taste with salt and pepper.
- 4 pour soup into bowls; garnish each with a tablespoon of yogurt.
