Indian Lentil Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1/2 cup chopped onion
  • 1 garlic clove
  • 2 teaspoons curry powder
  • 1 teaspoon crushed coriander seed
  • 1 teaspoon crushed cumin seed
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon olive oil
  • 5 cups vegetable stock
  • 4 cups water
  • 2 cups dried lentils, sorted and rinsed
  • salt and pepper
  • 6 tablespoons plain fat-free yogurt

Recipe

  • 1 sauté onion garlic, herbs and red pepper in oil in large saucepan until onion is tender, about 5 minutes; stirring frequently.
  • 2 add stock, water and lentils; heat to boiling.
  • 3 reduce heat and simmer, covered, until lentils are tender, about 30 minutes. season to taste with salt and pepper.
  • 4 pour soup into bowls; garnish each with a tablespoon of yogurt.
