Marmie's Even Leaner, "fat Burning Soup"

Total Time: 1 hr 45 mins Preparation Time: 30 mins Cook Time: 1 hr 15 mins

Ingredients

  • 28 ounces tomatoes, no-salt-added-tomatoes (hunts diced)
  • 7 cups water
  • 2 green bell peppers
  • 2 cups carrots
  • 1 cup green onion
  • 1 red onion
  • 2 cups celery ribs
  • 2 garlic cloves
  • 3 tablespoons tomato paste
  • 2 cups frozen green beans (french-cut)
  • 2 cups baby spinach leaves
  • 1 teaspoon black pepper
  • 2 teaspoons rosemary
  • 2 pinches sage
  • 2 pinches mace
  • 2 teaspoons onion powder
  • 2 pinches dry mustard
  • 2 pinches poultry seasoning
  • 2 teaspoons italian seasoning
  • 2 tablespoons oregano
  • 2 teaspoons thyme
  • 2 teaspoons basil
  • 2 tablespoons parsley
  • 1 teaspoon chili paste
  • 1 teaspoon salt substitute (my hubby likes this)

Recipe

  • 1 dice and combine all ingredients in large dutch oven pot, except frozen green beans and spinach.
  • 2 bring to boil for 10 minutes.
  • 3 reduce to simmer for 1 hour until vegetables are almost cooked to desired.
  • 4 now add frozen beans and spinach, simmer until cooked (10 min or so).
  • 5 freezes well for individual servings.
  • 6 enjoy!
  • 7 (if you are not doing a fat free version -- parmesan or mozzarella cheese to garnish are really tasty! looking for more protein? what about a bit of chicken or some lentils? both are yummy versions!).
