Lentils And Kielbasa

Ingredients

  • Servings: 12
  • 1 lb dry lentils
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon fresh thyme
  • 2 (14 ounce) cans beef broth
  • 3 cups water
  • 1 carrot, chopped
  • 1 celery rib, chopped
  • 2 lbs kielbasa, cut into 1/2 inch pieces
  • 1 (16 ounce) can diced tomatoes, drained
  • 3/4 cup grated parmesan cheese

Recipe

  • 1 rinse and drain lentils, but do not soak. in a slow cooker, stir together the lentils, onion, garlic, thyme, broth, water, carrot, sausage, and celery. cover, and cook on high for 3 hours, or low for 6 to 7 hours.
  • 2 add the tomatoes when there is 1 hour remaining.
  • 3 stir well before serving. top each serving with 1 tbsp parmigiano.
