Ingredients

- 1 lb dry lentils
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon fresh thyme
- 2 (14 ounce) cans beef broth
- 3 cups water
- 1 carrot, chopped
- 1 celery rib, chopped
- 2 lbs kielbasa, cut into 1/2 inch pieces
- 1 (16 ounce) can diced tomatoes, drained
- 3/4 cup grated parmesan cheese
Recipe
- 1 rinse and drain lentils, but do not soak. in a slow cooker, stir together the lentils, onion, garlic, thyme, broth, water, carrot, sausage, and celery. cover, and cook on high for 3 hours, or low for 6 to 7 hours.
- 2 add the tomatoes when there is 1 hour remaining.
- 3 stir well before serving. top each serving with 1 tbsp parmigiano.
